fix: resolve issue #5957

The PipelineDirectoryProcessor throws a NullPointerException when processing folder-scanning configurations for operations like /api/v1/convert/file/pdf and /api/v1/convert/eml/pdf. The ApiDocService.getExtensionTypes() method returns null when the API endpoint description does not contain a recognized INPUT_TYPE token. The code at PipelineDirectoryProcessor.java:239 calls inputExtensions.contains("ALL") without checking for null first. The fix adds a null check so that a null return is treated as 'allow all file types'.
